[Music] taking the lead from a handful of ticktockers who have come before us we’re going to make the Big Mac Taco tortilla folded up quesadilla [Music] thing and by thing I mean thing because it’s a hybrid it’s neither a taco nor a quesadilla nor a burrito nor a proper Big Mac you just take the components in a tortilla and you fold the whole thing up and you give it a quick grill we like the idea we thought we try it with one of the big tortillas that we like to use for our burritos bigger than store ones it comes from little taco shop right by us Nico right here in San Diego we’re all fans they did remodel a few years ago and jacked the prices way up and then they tried not to take credit cards and that did not work so they take them now the key is getting the tortillas not cooked and not folded it’s a challenge trust me everybody here’s how to do it and you get what you get anyway let’s make our sauce then we’ll get our Pat ready we’ll cook the Patty and once the Patty’s ready then you just build it you fold it you throw it back on the flat top and bring it back out again and and then eat you’re happy and you hope it’s worth it cuz if it’s not worth it it’s Max’s fault if only like seven of you people watch this episode it’s his fault if any more than seven it’s my idea it’s an excellent one sauce let’s go bowl Mayo we’ve done this many times little ketchup little yellow prepared mustard I like a little Sriracha little DIC pickle get in there you little pinch of salt and pepper we mix chunky Big Mac sauce now for the beef it’s a pound of ground beef certainly not going to use it all here’s the thinking these are the tortillas that we buy you can see they start to dry out and crack and stuff by the end of the day but I need one qu’s worth I think if I take a third of a pound and spread it into that what is that triangle triangle with the rounded Edge shape right triangle with a rounded that’s what I’m saying why I’m saying what I’m asking what is that shape is that a shape I don’t know I don’t think it is defined as a shape it’s not like a tra is a is a quarter of this it’s mostly triangle with the rounded one side is that any shape that anybody here knows Max says it’s not so it I don’t care you can’t just have a thing with four straight sides and then three curved edges and be like oh yeah that’s a square it’s a c square square it’s exactly what it is so what this looks like about third of a pound to me let’s see it’s coming along part of my hands rounded you see this making like a slice of pizza right like a slice of thank you that’s what it’s called no it’s called a Circ angle Circ angle all right but let’s just see is this no how’s I doing it wait where’s my my rounded part was supposed to be there but this is more rounded wait where’s you need one rounded Edge right so then this I need more watch this right oh that’s a good Square squ angle Circ angle so where’s the halfway point this is the way to do it pretty close I think I need to come out a little bit more like halfways like here a little bit more more this is fun this is called playing with your food and of course it’s it’s going to shrink a bit right so if you make your squirk angle or whatever Max is been calling it a slightly larger does that look right boys yes think you need more no I think we’re good okay I’ll give it just a tiny bit more that’s a good Circ angle beautiful okay season this a little bit pretty thin so just one side and cook it on the flat top right little oil little spread and then what are you calling this Max the Circ angle fine I know I said I wouldn’t I can’t look at it bear it’s just a little BFF all right just let her cook lovely well I’m not going to wait too long before I flip it because it’ll shrink even more but it’s going to cook a little bit when we throw the whole thing back on so let’s give it a flip fabulous all right couple minutes it comes off then we’re almost there all right let’s get this off get ready to build all right so here’s how we start we’re going to make one long line one cut Mark here halfway and down first on some cheese and this lower quadrant doesn’t have to be perfectly exact there you go now our Patty I think we were working like this right it did shrink a bit it’s going to be okay guys I want it to make it bigger sauce perfect some lettuce we’ve got pickle up here diced onion probably way more than McDonald’s would ever give you but it’s going to be good and last but not least fries up in here up in here come on everybody work with with me work with me and you’ll see great so here’s how this happens this guy quickly comes and folds like a blanket over the top you press down this side comes and folds like a blanket over top you see where this is going final over the top is this way like so this hold guy on the flat top to get crispy and gorgeous and we’re in wow it’s a big boy if I need to put something on it to help it right we do that side flip it over and then eat it seems pretty obvious we don’t want to get too crispy though melting up real nice real nice oh yeah that’s going to come out look at that all right I’m going to flip but do this do this do this oh look at that you know what that is who wants that is that cheese yeah it’s hot as F all right let’s do this again I just wrap that cheese around her fry good all right two minutes we’re out [Music] all right we’re here let’s take it off cut it and see what we’ve made and we’re there swing look what we got huh what do you think I’m excited all right let’s see if we can cut this kid and ah look it and it’s nice and still medium rare in the middle that’s beautiful huh well let’s have a bite shall we I mean why wouldn’t we I think we’re about a closer to a half a pound of meat in here now it’s damn Delicious Jesus but I got grease all over my glasses worse it’s damn Delicious and how could it not be beef cheese pickles lettuce fries and the Mac sace that honestly makes everything
