You did well David, I think honedlty it’s how you cook the beef and how you cut and also pair it, for me I still get the cheap ones and I love to cook them, they’re still tasty as long as you respect the meat and know how to cook it properly still would devour both of those
Hey just a tip if your using a cast iron skillet on hot heat(which works best for a sear) then you should probably use oil with a higher smoke point than olive oil otherwise looks good
I'm gonna be perfectly honest here, I don't see any problem with a well-done steak unless all you have is the bone or something cause ya burned it! Steak is steak, and while some steaks can maybe be a bit drier or tougher when well-done, there's hardly anything that can change the taste of a good steak, except the carroway seeds in Montreal steak seasoning 🤢😅😂

Flank steak does cook quickly so it’s tricky because it’s so easy to cook it beyond what one intends. That residual heat can finish it off while it’s resting. Get that skillet really hot and sear it for the crust for just a few minutes and then flip to get the other side. Two and a half to three minutes per side could be enough, and let it rest for at least ten minutes. Cutting thin slices across the grain helps a lot. But whether it’s well done or rare, you can load that delicious flank onto a tortilla with some grilled onions and peppers, sour cream, chopped cilantro, and shredded cheese and enjoy some excellent tacos or fajitas. If you go the fajita route, when you marinate, I suggest using coriander powder, cumin powder, garlic and onion powder, chili powder, and salt and black pepper along with some lime juice. You can marinate the sliced onions and bell peppers in that too. Plate it with some sliced avocados and maybe a salsa. Beautiful and delicious! Now I’m hungry and want fajitas. 🙂
Side note: If the olive oil has a strong flavor, you might want to opt for another, high heat, neutral oil. I like using sunflower, peanut, safflower, or avocado oil.
