Why throw away the vegetables you cooked with the beef if you are going to cook the same vegetables to add the beef into? Wasteful. I think I prefer the practical British version.
One trick I learned from Alton Brown…. White wine will be less bitter afterwards. My stews are 💯 better since I switched to a Pinot Grigio or other white wine.
I don’t know what the French words were, but I’m going to make this some day. Looks awesome. I’ve never cooked with winter. I won’t be able to say that much longer…
