  1. When I was a young 1st year apprentice chef (20 years ago) one of the chefs was taking a 20 gallon pot of caramelised onions to the fridge to cool off and dropped the whole pot on the ground.

  2. Oooooo. Make some onion jam with those onions and put it on a burger with a pretzel bun and some bacon…man I'm hungry now.

  3. Idk, I get caramelized onions just fine after about an hour on medium heat. I'll never know if they could be better after 2.5 hours cuz I ain't waiting that long. πŸ˜‚ I don't use butter, just some oil at the very beginning and then add a splash of water (just enough to keep from sticking/burning) every 5 mins or so. Mine are never burnt or bitter!

  5. Put some water when you start and close the lid. That will make the onions cook faster. Once water evaporates it will start caramelizing

  6. If you make a mistake, own it, learn from it. if you don't know ASK, you can't learn without asking questions and owning your mistake.

  7. It's really nice to see someone show you that it's fine to not get it right the first time. Cooking is a skill, and you have to practice! Keep trying, changing, and learning!

  10. You can save something like an hour if you steam/shallow boil the onion at the start. They're similar to mushrooms in that the first step is getting them dry enough to actually cook.

  11. Be empowered by the feedback. Dang. Coming in with the wisdom. I love Caramelized onions but I don't have the patience to wait for full carmelization
