Chicken à la King



How to make chicken a la king at home! Chicken, mushrooms, peas and carrots in a creamy sauce served over biscuits. A quick and easy but hearty and delicious, from scratch, meal for busy weeknights! The whole process of making this, including the biscuits, takes less than 20 minutes.

What you’ll need:
2 boneless, skinless chicken breasts
4 oz mushrooms (fresh or canned)
3/4 cup frozen peas and carrots
1/4 cup butter or margarine
1/2 cup all-purpose flour
1-3/4 cup chicken stock or broth (or use 1 (15oz) can)
1 cup milk
1/2 tsp salt
1/4 tsp black pepper
olive or vegetable oil
10-12 buttermilk biscuits (see how I make my biscuits here: http://youtu.be/CLc0Hkbwz7c )

Cut chicken into bite sized pieces and cook until done (I simply put into a pot with enough water to cover adding parsley flakes, onion and garlic powder and salt. When cooked through, drain). Set aside. In a medium saucepan, sauté mushrooms over medium-high heat in olive or vegetable oil until browned. Set aside. In the same pan, melt butter over medium heat. When almost completely melted, whisk in flour. Cook for one minute. Gradually whisk in chicken stock or broth and milk. Make sure to whisk in the liquid slowly to prevent lumps. Add in the cooked chicken and mushrooms, frozen peas and carrots and salt and pepper. Bring to a boil, stirring constantly. Boil for 1-2 minutes to cook flour. Serve over biscuits. Serves 5-6. Enjoy!
