Carrot Cake



Learn how I make my carrot cake in this easy video recipe. This is exactly like I made it at the diner I used to work at. Super moist, rich and delicious!

What you’ll need:
4 eggs
1 cup brown sugar
1 cup white sugar
1-1/2 cup vegetable oil (I used 3/4 cup oil and 1/2 cup unsweetened applesauce)
2 cups flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 Tbsp vanilla extract
1 Tbsp cinnamon
3 cups grated carrots

In a medium bowl, combine flour, baking powder, baking soda and salt. Set aside. In a large bowl, mix eggs, sugars and vegetable oil until combined. Add in vanilla. Gradually add in dry ingredients and mix well. Add in cinnamon and carrots. Beat until fully mixed.
Evenly pour the batter into 2 prepared cake pans that have been greased and floured. Bake at 350* for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes in the pan and then turn out onto a plate or wire rack to cool completely. Frost with cream cheese frosting and enjoy!
