  1. Don’t throw the skin away… cut it up with poultry shears, season it – salt, pepper, paprika & put in pan in 450° oven until super duper crispy (like pork rinds). YUM!

  2. Why are you rubbing avocado oil on the skin when you're throwing it away? The only reason to rub it on the skin is to help crisp it up during roasting. A stupid, wasteful step.

  3. I prefer to poach my chicken in chicken stock for salad like this. It will be juice and much more flavourful.
