Lomo Saltado
@theanelamalik In so many ways immigration is one of the defining features of the food space, here, abroad, everywhere. You’re looking at one of Peru’s most iconic dishes… made possible by Chinese immigrants. In the late 1800s, thousands came to Peru for work—and were met with brutal conditions: forced labor, violence, exploitation. A legacy of colonialism and global displacement. Out of that history was born Chifa cuisine, a Chinese-Peruvian culinary adaptation that’s so delicious, blending techniques and ingredients across continents. The name chifa is thought to have originated from a Cantonese phrase that translates to “cooked rice”. And that’s how Lomo Saltado was created, one of the most prominent Peruvian dishes today enjoyed around the world, a stir fry of beef, onions, tomatoes, soy sauce, and vinegar. A sizzling stir fry of beef, onions, tomatoes, soy sauce, and vinegar—now a national staple. This isn’t just dinner. It’s migration on a plate—and a reminder of what immigrants carry, create, and cook into existence. — Video Description – Scenes of Lomo Saltado which Anela ate all throughout Peru and will be getting again in DC soon + some historical photos of Chinese immigrants in Peru + some photos of chinatown in Lima.

I am Peruvian and let me tell you that everything looks super accurate, wondering how you do that 🤔, even Nick's causa, in Peru there are 3 types of causa, chicken, tuna and vegetarian.
Fun fact: Inka kola, have that bubble gum flavor since Coca-Cola bought it, in the past it had more like an herby flavor if that makes sense.
