You’re cooking your Shawarma wrong!!
Let’s smoke some shawarma.
After a disappointing cook yesterday, I decided to get the grill going again and try something different. This time it was rotisserie chicken shawarma cooked on the @weberuk Genesis. Marinated chicken thighs were stacked onto the rotisserie and slowly cooked while a handful of wood chips added a gentle layer of smoke.
( using a smoking box is a great way of adding smoky flavours to your food but having the reliability of gas)
A useful tip when making shawarma or kebabs at home is to remember that the meat stack is designed to cook from the outside in. If you wait for the whole stack to cook through before carving, the outer edges will burn and the texture will suffer. Instead, cook the exterior layer, slice it off, and allow the next layer to continue cooking repeating the process until the stack is finished.
The chicken was served in Lebanese flatbread with smoked hummus, homemade chips, tahini, tomatoes, onions and pickles.
To finish, it was topped with Iraqi amba sauce a vibrant condiment made from pickled mango, turmeric and spices that is widely used across Middle Eastern shawarma shops. Its tangy, slightly spicy flavour adds a distinctive sharpness that balances the richness of the meat.
The wrap was then brushed with pomegranate molasses and returned briefly to the grill to caramelise the exterior.
