The recipe is definitely off. I usually double the crumble, add at least 1/4 more butter, brown sugar and flour are almost equal….oats/granola is for Apple CRISP, not crumble. And crumble has a bottom crust, crisp does not. Oh, and he lost me at cranberries!
Probably the wrong apples, he never said what kind he was using. I worked at Whole Foods, there are at least 30 different types of apples. They all have different flavors and levels of sweetness. Also, too much butter. Butter needs to be COLD to make this work. The whip cream should have added MORE sweetness, so I question the brand. If that whip didn't make it even sweeter, then all his ingredients are in question. You can't recreate a quality recipe with cheap ingredients.

You cannot be making these recipes correctly, if they’re all nasty😅. I have made plenty of his recipes and it comes perfect every time and it is goodt!!! I still use his techniques that I learned over 10 years ago. So it’s something you’re doing or not doing.
My mother got her culinary degree in baking. My dad got his in food (yes there is a difference). Growing up learning how to cook from my dad but also picking baking skills from my mom, is why I became a chef. I can cook & bake only because of my parents. I just wanted to say that for anyone in the same boat 🤷🏽♂️🫡🤣🤣
Adjustments. 1. Pie dish might be too big for that recipe. 2. Use chilled butter as room temp butter (or too soft butter) wont hold the crumb. So you end with flat crumbs instead of nuggets. 3. Try adding the granola to the flour, mix and then add the butter. Bigger crumbs that hold their structure better. (its still a race against time before the butter melts) 4. let the apple mixture chill before topping with the crumb because again racing against butter melting lets not help it. 4. add a few small squares of cold butter on top of the apples before adding the crumb as to not dry it out too much.
