For the cookies, you probably a) had the temperature too high or b) you put your cookie sheets in the oven in such a way that blocked the hot air below from getting to the top. Try a smaller cookie sheet and/or a lower temperature next time!
Remember when the channel is full of grilled cheese variants? Me too buddy But it's feel much fresher now and the grilled cheese still appear once in a while
