Nylon Khaman Recipe
Ingredients
β€’ 1 cup gram flour (besan)
β€’ 1 tsp citric acid or Nimbu ke phool
β€’ 1 tbsp oil
β€’ 1 pinch turmeric powder and asafoetida
β€’ 3 tsp sugar
β€’ 1 tsp salt
β€’ 3/4 tsp baking soda
β€’ 1/2 cup + 2tbsp water (adjust as needed)
For Tempering (Tadka)
β€’ 2 tbsp oil
β€’ 1 tsp mustard seeds
β€’ 2–3 green chilies (slit)
β€’ 8–10 curry leaves
β€’ Β½ cup water
β€’ 3 tbsp sugar
For Garnish
β€’ Fresh coriander leaves (chopped)
β€’ Grated coconut (optional)

1. Prepare Batter
β€’ In a bowl, take 1/2 cup water . Add salt, sugar, citric acid
β€’ Add turmeric powder oil and asafoetida
β€’ Whisk well. Now keep for 5 minutes.
β€’ Now add gram flour in batches and if needed add 2 tbsp water.Keep it slightly thick but flowing

2. Activate & Steam
β€’ Grease a steaming tin or tray
β€’ Add baking soda to the batter and mix gently (it will become frothy)
β€’ Immediately pour into the tray
β€’ Steam for 15–20 minutes on high flame

3. Prepare Tadka
β€’ Heat oil, add mustard seeds β†’ let them crackle
β€’ Add green chilies, curry leaves

β€’ Pour hot tadka evenly over it
β€’ Garnish with coriander leaves
