Best duck I ever had was a Peking duck done at a nice Chinese place in Chinatown in SF. The outside was deep red, shiny, literally crackling and almost candied-like in flavor… Amazing!

Only the highest level restaurants are doing this, which most people might experience only once or twice in their life. Either that, or home cooks who are both insane and rich
