I made the Lady fingers from scratch, but store bought is completely fine. The eggs aren’t cooked so make sure to use pasteurized eggs!

Ingredients:
Lady fingers:
– 3 room temperature eggs (split egg white and yolks)
– 1/2 cup sugar
– 1 cup AP flour
– powdered sugar

Tiramisu cream:
– 1 and 1/2 cup espresso
– 4 egg yolks
– 1 cup sugar
– 500g mascarpone
– cocoa powder

Instructions:
Lady fingers:
1. Preheat oven to 355F
2. with a hand mixer, mix egg whites and slowly add in sugar at the same time
3. fold in egg yolks and sifted AP flour
4. pipe batter onto a baking sheet lined with a silicone baking mat or parchment paper
5. dust powder sugar
6. bake for 15min at 355F
7. let cool on a baking rack

For the tiramisu:
1. in a mixing bowl, add egg yolks and sugar and whip
2. add mascarpone and whip again
3. before assembling the final dish, fully submerge the Lady fingers in espresso for 2-3 seconds
4. In your final dish, assemble the tiramisu by alternating layers of cream and lady fingers (the first and last layer should be cream)
5. dust cocoa powder over the tiramisu
6. refrigerate overnight
7. enjoy!
