  3. I wonder what happened to the lives of all the owners and workers at the restaurants that had to close down.

    With the rate at which these restaurants rotate, running one seems like a soul crushing gamble. And if it’s hard to stay afloat even at a ”busy shopping street” like this one, I can only imagine it’s even more difficult elsewhere (then again maybe there’s premium overhead costs associated with a location like this that makes it hard to earb enough money to keep the business alive, even with a lot of regular customers)

  4. I think these episodes have single-handedly removed my American illusion of Japan.
    It’s not all crazy cheese pulls, or personal ramen booths, or robots delivering your food, but it is a country full of normal people who love comfortable and simple food from time to time, and that’s beautiful in a better way I think.

  6. When they are subtly watching you eat, notice that you are a little short on sauce, and top you off without having to ask, that is someone who really cares about the food they serve.

  8. I've yet to see a single egg on your channel cooked enough for my liking, but I know the Japanese way is closer to raw than cooked. To me, that omelet needed another three minutes, minimum, to get that crispy texture and get rid of the goopy yolk texture.
