OVEN POACHED EGGS IN TOMATO SAUCE (pg 11)
2Tbsp chopped green peppers
2 Tbsp butter or margarine
2c canned or cooked fresh tomatoes
Salt and pepper
8 eggs
1/4c grated Parmesan
Heat oven to 400 degrees. Cook green peppers gently in butter 3 or 4 minutes, or until wilted. Add tomatoes and salt and pepper to taste; heat until boiling. Break 2 eggs into each buttered individual baking dish (or 10″ x 6″ x 2″ baking dish). Spoon boiling tomatoes over and around eggs (exact amount you need to use will depend on size and shape of baking dish. Tops of yolks should barely show through sauce). Sprinkle with cheese and more salt and pepper. Bake 10 to 15 minutes at 400 degrees F, or until eggs are as firm as desired. Serve on or with toast.
FRIDAY NIGHT SPECIAL (pg 37)
4 slices 2 or 3 day old bread
1/4lb processed cheese
2 Tbsp minced onion
1/2 tsp salt
1/4 tsp paprika (I used smoked paprika)
1/8 tsp dry mustard
2 eggs
1 1/2c milk
Start heating oven to 350 degrees F. Cut bread slices into uniform rectangles, squares, or triangles. In well greased 1qt casserole, arrange half of bread, then cheese; sprinkle with onion salt, paprika, mustard; then add rest of bread. Beat eggs and milk together; slowly pour over casserole mixture. Set casserole in pan of hot water. Bake 40 minutes or until puffy and knife inserted in center comes out clean.
QUICK BACON SPAGHETTI (pg 50)
1/2lb bacon slices cut into squares
1/2c chopped onions
1 chopped green pepper
1/2lb spaghetti, broken
1 1/2c boiling water
3 1/2c canned diced tomatoes
1/2 tsp salt
1 Tbsp Worcestershire
Grated Parmesan Cheese
In large skillet, cook bacon, onions, and green pepper about 5 minutes, or until lightly browned. Add uncooked spaghetti, water, tomatoes, salt. Simmer, covered, 20 minutes, or until spaghetti is tender. Stirr occasionally with for; add a little hot water if mixture becomes dry. Stir in Worcestershire. Serve sprinkled generously with Parmesan.

Oh I love this book! It was my first of the series and I've found some good budget recipes in there. I think I'm up to 5 booklets out of the series now.

I absolutely gasped when the puffy cheese casserole appeared before the camera. Gorgeous ! Very worthy of a photo in Good Housekeeping magazine. what a versatile dish, too.
Your first recipe reminded me of Shakshuka. I love that the US had their own version of this, though it was done the opposite of that dish. IE, it had you break eggs on top of tomato mixture that had more onion/garlic/seasonings. WOW! that bacon spaghetti was so similar to my childhood best friends family recipe, minus the green peppers. I LOVED IT! Dream about it, never been able to recreate it, but I am going to try this. Minus the peppers, lol. I love my Good Housekeeping Cookbook, which sadly has no illustrations. Thanks for sharing!

I love these little books, ive got all sorts of them , normally about anything Good Housekeeping, Betty Crocker or Better Homes put out is good.
My son calls the change in size shrinkflation.
That second recipe could be customized in many ways.
I was born in 1951 and we had a Mexican cook (my Mother 😉). She made a very similar dish like the baked tomato and eggs except she made it with fresh salsa and served with homemade tortillas. A real dollar stretching meal. Delicious!

You can now buy pot length spaghetti. It fits perfectly into a 6-quart Instant Pot, Probably would work for this too..
I make something like the first recipe instead of plain canned chopped tomatoes. I use anything from tomato salsa, Rotel tomatoes, or seasoned canned tomatoes to poach the eggs with good toasted bread. The second recipe might be good with some chopped ham

I'm going to make the Friday Night Special one morning this week before work. It looks amazing. In my building's laundry room we have a freebie bookcase; someone left a 1985 Betty Crocker's "Great Ways with Fish & Seafood"! It's the same size as the cookbook you used in this video. I grabbed it so fast, there was a PJ-shaped hole in the laundry room door.

I love what were shown today… the tiny casserole dish, the green soup (?) bowl, the nostalgic casserole dishes and cookbook. They give such a warm feeling to the heart. They remind me of what i grew up with as a kid.

The tomato dish looked delicious, but I love a good runny yolk.

And finally, the quick bacon spaghetti…that fond!!! For the record, I’m not insulted by the broken pasta. It looked like a successful recipe to me.

I wonder if the 'Friday' dish might also refer to its time when men were paid on Friday and the wife went to the grocery on Saturday. Just a thought. That is the one of the three that looked really good.
