  5. Ingredients

    For Puchka Water (Pani):
    β€’ Fresh coriander leaves – 1 handful
    β€’ Mint leaves – 1 handful
    β€’ Green chillies – 2
    β€’ Ginger – 2-inch piece
    β€’ Ice cubes – few
    β€’ Water – as needed
    β€’ Tamarind – small ball (soaked in hot water)
    β€’ Roasted jeera powder – 1 tsp
    β€’ Red chilli powder – Β½ tsp
    β€’ Puchka/Pani puri masala – 1 tsp
    β€’ Black salt – Β½ tsp
    β€’ Salt – to taste
    β€’ Lemon juice – 1–2 tbsp
    β€’ Raw mango (chopped) – 2–3 tbsp
    β€’ Chilli flakes – optional

    For Filling:
    β€’ Boiled potatoes – 4 (mashed)
    β€’ Boiled chana – Β½ cup
    β€’ Onions – finely chopped
    β€’ Cucumbers – finely chopped
    β€’ Raw mango – chopped
    β€’ Ready-made puchka masala – as per taste
    β€’ Roasted jeera powder – as per taste
    β€’ Black salt – as per taste
    β€’ Lemon juice – 1 tbsp
    β€’ Mint leaves – chopped
    β€’ Prepared pani – few spoons

    Other:
    β€’ Puchka/Pani puri shells

    πŸ‘©β€πŸ³ Procedure
    1. Prepare the Base:
    β€’ Boil potatoes and soaked chana in a cooker for 2 whistles.
    β€’ Let it cook on low flame for 5 minutes.
    β€’ Allow pressure to release, then take it out.
    2. Make Puchka Water:
    β€’ Blend coriander leaves, mint leaves, green chillies, ginger, ice cubes, and water into a smooth paste.
    β€’ Soak tamarind in hot water and extract the pulp.
    β€’ In a bowl, mix the green paste with tamarind water.
    β€’ Add roasted jeera powder, red chilli powder, puchka masala, black salt, and salt.
    β€’ Mix well and adjust water consistency.
    β€’ Add lemon juice, chopped raw mango, and chilli flakes.
    β€’ Mix well and keep aside.
    3. Prepare Filling:
    β€’ In a bowl, mash boiled potatoes.
    β€’ Add chopped onions, cucumbers, raw mango, and boiled chana.
    β€’ Add puchka masala, roasted jeera powder, black salt, and salt as per taste.
    β€’ Add lemon juice, mint leaves, and a few spoons of prepared pani.
    β€’ Mix everything well.
    4. Assemble:
    β€’ Crack the top of each puri.
    β€’ Fill with the prepared mixture.
    β€’ Dip in the pani or add pani inside.

    ✨ Serve immediately and enjoy crispy, tangy puchkas!
