Greetings from Bangladesh. We have traditional parctice of pickles made out of fruits, there are many variations. But , we do not have practice of fermented vegetables in modern days. Can you please introduce some methods of vegetable preparation, that does require cooking or processing once and can be ready to eat , and be kept for atleast 1t-20 days? I am asking to much , and as English is not my first language, I hope tou understand me.

The problem is
I rent
And the freezer at apartments is always smaller than refrigerator. It is a standard refrigerator construction with big room for storing chill and small room for freezing (1/4 of the whole fridge)

The day I learnt that if i store food in the fridge fast after cooking, i can eat them straight out the fridge without reheating, changed my life. Now i spend 2hours cooking on a weekend and every day i spent 0 time on cooking. Hehehe.
