There is a huge misconception about Ghee which is very important in Indian cooking, religious ceremonies and medicine so Ghee is not simply fat extracted from milk by boiling, there is a process by making curd from A2 cows milk, that sour curd is churned (bilona method) after that the butter is heated on burning wood (not stove) at medium heat in a clay pot to make ghee.

Ghee is my personal favorite. I definitely use olive oil way more but when something should be sautéed in butter I do it with ghee. Is so much more flavorful and you dont have to worry about burning. Absolute game changer
