Fontainebleau’s Newest Restaurant was a Disaster

The hype surrounding the opening of Cantina Contramar at Fontainebleau Las Vegas was massive. As the first U.S. expansion for world-renowned chef Gabriela Cámara, expectations were sky-high for this Mexico City seafood institution. Cámara, named one of Time Magazine’s 100 most influential people, partnered with award-winning architect Frida Escobedo to create a space that is meant to be a quiet, sophisticated counterpoint to the usual Las Vegas spectacle. The menu is designed to showcase “excellence in simplicity,” focusing on high-end ingredients and coastal Mexican traditions that Cámara made famous at her original Contramar and the late Cala in San Francisco.

However, a beautiful room and a big name don’t always translate to a great meal. In this review, we’re breaking down our experience with some of the menu’s staples: the Coctel de Camaron, Fish Quesadillas, Guacamole, Fish Veracruz, and the Fideo Costeño. Despite the culinary pedigree behind the kitchen, the execution of these dishes left us wondering if the “simplicity” was leaning a bit too far into “disappointing” for the price point. If you’re planning a night at Fontainebleau and considering Cantina Contramar, watch this before you make your reservation.

  2. You arent getting anything taken off a bill in a Vegas casino unless you complain. I'm mildly surprised they didnt tack on a surcharge for using a table for longer than allowed. For a while fine dining in Vegas was excellent. Now it's $40 for pasta and $80+ for mediocre steak drowned in butter and too much salt. Sure there are still some places that are worth it, but few and far between.

  3. Haha! My favorite part of this video was listening to "in retrospect", voice over Jasmine, cleaning up the optimism that original Jasmine was showing in the video. Very funny! Thanks for giving me a review of somewhere I'll take a hard pass on. The overpriced average food was bad enough, but the 44 minutes between courses is beyond inexcusable to me.   5. Another reason I appreciate your channel as your instincts, descriptions and experience is accurate. It's one thing to get a dish wrong, but to have almost all of them including the drink is definitely a no go for me. Especially at those prices! Your lovely as always and keep up the great work.

  7. Gotta check out SUSHISAMBA in the Venetian. Everything is great there and the employees are cool and manager too. Noon to 5 is a great happy hour there . The brother Sergio and Ben will take care of you

  8. I went there once about a month after opening. Talked to a dozen bartenders and servers, and once i got past all the opening excitement talk, i saw all the complaints and real problems they had. This was before the nacho fiasco.

    Went back again to check out liv pool w my roomie who was scouting the pool service girls/ hosts. She saw the same thing.

    Went a third time for their winter event when they did a skating rink same time as cosmo AND cosmo was discontinuing their more popular version of it!? There was and odd quietness to it that wasnt at cosmo or other x-mas events. It was like the disney parents hiding their stress of maxed out credit cards asking their bored kids aren't they having the greatest time!?

    All 3 times the staff were nice, but you can see the sadness and desperation of them looking for new work. This is what happened to me at resorts world.

    The new casinos are classy, but too generic. They're not… vegas. They could be in any tourist corridor. Each time theres a new event opening, its a chore to go back. Its like the marvel movie of casinos, so i stopped

  9. Fountain Blue? Is that the same place that had the infamous 25$ nachos that were like 5 chips? Sorry you had a bad experience, the food didn't even look good

  10. I recently heard someone use the adjective 'callipygian', and it came to mind watching you walk through the hotel. Thanks as always for the extra effort! I understand the curiosity about chef Cámara, but heard there's another restaurant in the hotel that gets decent reviews and has an awesome name. I bet Mother Wolf restaurant's arrabbiatta is more than sweet ketchup 🤤. Great video you two!

  11. here in phoenix, we have supermarkets that cater just to mexicans. fresh tortillas, guac, salsa are all made in house, and not that pricey.. you got robbed

  12. Even for a new restaurant the poor service and average tasting food are unacceptable. We love Casa Playa at Encore. The ambience, food and service are outstanding. #wulffdendad

    I love marinated spicy carrots, but as an opening appetizer?🤔
    Supposed to be known for homemade tortillas, but you don't bring those with butter and salsa? Nothing you ordered stood out! They looked ok, but ok's not ok under Vegas pricing!

  14. I think you were too nice. What you experience is one of the many many reasons we never go to new restaurants that recently opened. We wait until the staff get the time to get their stuff together, other wise it just ruins the moment,

  15. First of all….goddam Jasmine…that dress is amazing! Secondly, there is no such thing as fancy mexican food. You're better off going to Roberto's for anything mexicano. Hell for what you paid, you could of bought out a whole taco truck.
