I do tipping like this: I always start at 100% tip. Throughout the evening, the tip goes down depending on my entire experience. The waiter is able to recoup tip percentage as well, but only if they go "above and beyond". Ordinarily, this balances out to around 20%, but there have been times where I tip less than 10% and there has been twice that I tipped the full 100%. Once at a Dennys (funny enough) and once at wolfgang puck down in texas… that one hurt…
