Sweet & Sour Broccoli & Pasta Salad

8 ounces (about 3 cups) uncooked Cellentani Pasta (or any twisted pasta)
2 cups broccoli florets
1 Golden Delicious Apple, chopped
1 large carrot, shredded
1/4 cup finely diced onions
1/2 cup mayonnaise
1/3 cup apple juice
3 Tablespoons apple cider vinegar
1 Tablespoon olive oil
1 Tablespoon Dijon mustard
1 teaspoon honey
1/4 teaspoon ground thyme
salt and pepper, to taste

Make the salad dressing by whisking together the mayonnaise, apple juice, vinegar, oil, mustard, honey, ground thyme, salt and pepper. Whisk until smooth and well blended. Set aside.

Cook pasta in a large saucepan of boiling water according to the package directions for al dente. Two minutes before the pasta has finished cooking, add the broccoli florets. Drain and rinse under cold water until the pasta and the broccoli are cool.

Place the broccoli and pasta in the bowl with the salad dressing. Add the chopped apples and carrots. Stir everything together to coat well with the dressing.

  1. Another dish to try. I’ve made the chocolate sugar cookies this week plus I’m making the carrot cake tonight for hubbys birthday. His request. I have 3 people now that request this for birthday cakes, only change I make is raisins are added per request and orange zest and juice omitted per request. You are teaching me how to up my game in cooking

  5. Pasta: I'm confused. 16 oz is in the box, and you needed one cup, aka 8 oz. You measured out 3 cups in a liquid measure Pyrex.

    You needed half the box. Isn't it more practical to measure one cup in a dry cup measure?
