And the biggest surprise? It’s not really about buffets anymore.

From traditional setups to made-to-order experiences, AYCE in Vegas has evolved in a big way. In this video, we take a closer look at five very different all-you-can-eat concepts to see what’s really going on—and whether this is the future of dining in the city.

Welcome to Let’s Eat Vegas—your guide to the Good, the Bad… and the Delicious.

I’m a chef and former restaurant owner, and I tell it like it is.

  1. AYCE in Vegas has definitely changed… but I’m curious—
when you hear “all-you-can-eat,” what do you picture? Traditional buffet… or something like this?

  2. This style of buffet is much better; everything is served fresh and not sitting under a heat lamp to get cold or hard. I would love to try any of the restaurants in your video; everything looks delicious!

  3. i ordered the stk hamburger in san rancisco. asked for medium. it was a hockey puck with no flavor. i was hearing about hamburgers at steak houses were great due to them using scraps or trims from steak to grind or burgers. very unhappy eater here.

  4. Carmella's looked and sounded divine. I would like to try the newer AYCE version, which looks more my speed, as I would rather have extraordinary quality over quantity.

  5. The first of this style of all-you-can-eat that we tried was the Border Grill Sunday Brunch at the Mandolay Bay. It is superb. Very inventive menu. We never see this great restaurant reviewed. Why is that?
