Cooking for Two – Small Batch Slow Cooker Recipes You Need to Try!

If you live in a small household and LOVE small batch slow cooker recipes, this video is for you! I’m trying out some easy slow cooker recipes for just one or two people from Fix-It and Forget-It.

APPLE SAUCE HONEY PORK CHOPS (pg 149)
12oz pork loin chops
onion powder, to taste
black pepper, to taste
1/4c apple sauce
1/8c honey

Season both sides of the chops with onion powder and black pepper.
In a frying pan sear the chops on both sides.
Add the chops to the crock with any drippings.
Mix together the apple sauce and honey and then pour over the top of the chops.
Cover and cook on low for 4 hours.

CHEESY BROCCOLI & CAULIFLOWER (pg 231)
2 eggs
1 Tbsp cornstarch
1c shredded cheddar cheese, divided
1/4c cottage cheese
1/4 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp pepper
3/4c chopped cauliflower florets
3/4c chopped broccoli florets
1/4c chopped onion

Spray crock with nonstick spray.
In a bowl, mix together the eggs, cornstarch, 3/4c of the shredded cheddar cheese, cottage cheese, salt, onion powder, garlic powder, and pepper.
Stir the cauliflower, broccoli, and onion into the cheese mixture. Pour this into the crock.
Cover and cook on low for 2 1/2 to 3 1/2 hours.
Sprinkle the remaining 1/4c of shredded cheddar cheese over teh top of the contents of the crock 10 minutes before serving and re-cover.

CHICKEN TACO CHILI (pg 119)
1/2c canned black beans, drained and rinsed
1/2c canned cannellini beans, drained and rinsed
4oz boneless, skinless chicken breast, diced
3/4c salsa
1/2 jalapeño pepper, seeded and diced
1/2c corn kernels
1/4c chopped red onion
4oz tomato paste
1 tsp chili powder
1 tsp cumin
1 tsp salt
1/2 tsp oregano
1/4 tsp pepper
4c chicken stock or broth (note: I would reduce this to 2 cups!)

place all ingredients into the crock. Cover and cook on low for 6 to 7 hours.

  1. Years ago, I got a tiny slow cooker for $10. It's the perfect size to make a pot of broth with the bones and scraps from a rotisserie chicken. Small batches of soup and stew are great if you don't want to eat the same thing for days on end.

  2. "It'll be fine." Words to live by. I substitute ingredients all the time to suit what my family likes to eat. Everyone cleans their plates and we're all still alive, so we're good.

  3. Sounds like the chili recipe needs some cornstarch and less broth. The veggie concoction does sound like a great light lunch with a salad and/or some warm bread.

  4. Facing the day without that 1st cup of coffee is barbaric! Take care of yourself, young lady. I see you're using what looks like my Mom's old mixing bowl, again.

  5. Always appreciate recipes for only two! Also appreciate crock recipes! I have a very old very small crockpot. It’s bigger than a little dipper but smaller than the smallest size available today. They should bring that size back – it’s perfect for one or two side dish portions.

  6. I bought this cookbook after your 1st video from it and LOVE it. Our favorite recipe would either be Winter Stew (pg 101) or no Fuss Chili (pg 113).

  9. I cook for 4 – 1 portion for me and 3 portions for my husband. He doesn’t eat leftovers. If I only cook for 2, he thinks I’m trying to starve him. I have this cookbook, and make the mini magic meatballs for holidays (doubling the recipe). It’s a nostalgic family favorite.

  10. Anna, so happy that you are cooking from this book again. I received a used copy for Christmas. I asked my sister to look for it during her book store hunting after watching one of your previous videos. I made the Simple Salsa Soup on page 81. It was very easy, with few ingredients. It was good but I think I would use no sodium chicken stock instead of reduced sodium as I found it too salty even with omitting the salt. I have book marked a few other recipes to try. After seeing the porkchop recipe, I will be adding it to recipes I want to try. Thanks for continuing to feature small batch recipes.

  12. I’m trying the cauliflower and broccoli dish for sure. We eat a lot of cauliflower and it’s getting harder to find new ways of cooking with it.

    Also, I love your purple cardigan! May I ask where you got it?

  13. That soup Recipe is similar to soups that I throw together in my large crockpot. I don’t follow any specific recipe. I just put in items that I have on hand and what I am in the mood for. I do like my soup thicker. I then eat one serving, put two servings in the refrigerator for later and four individual servings in the freezer that I can use them in the future I love batch cooking for one person. One item I use to thicken soup is quinoa.

  15. After my dad passed, my mom bought a tiny crock pot. She put a chicken thigh, a cut up potato and a cut up carrot in it, before work, then had a lovely roasted dinner when she got off.

  17. Indeed, you ARE a slow cooker enthusiast. We always have pork chops in the freezer. The apple sauce chops looked delicious.
    The cheesy broccoli and cauliflower also looked great, but I’m a big fan of cruciferous vegetables.
    Doug thought the chili looked a little watery than he’d like. I think you’re right about the proportions of liquid to solid. I’d try it again with less broth.
    Keep the cooking for two recipes coming. 😊

  19. These all look great! My husband favorite meal is pork chops with green beans and apple sauce, so…that one is going to be tried for sure. Do you think the Chicken taco Chili would freeze well? And girl, drink your coffee! 😆
