  3. Thank you for this great recipe. I made it tonight and it came out great. Wonderful tips on using your hand for doneness , I had seen chef’s do it but they didn’t explain it that well. Same for the sauce thickness guide.

  4. I made it to 12:25 (about 75%) with no dairy (I’m kosher), was so exited. Could it be, I wondered, a great French dish will be dairy-free? Alas, disappointment. But other than that sauce, the steak and “pomme frites” look amazing!!

  9. Re: fries/frites…I heard in a history or food podcast that during one of the wars, it was the Belgian chefs who was making and teaching how cook and because the chefs spoke French…you know.
