Sweet and Sour Chicken

I am sharing with you a popular Chinese recipe that is loved by people all around the world. Believe it or not, you cannot find a Chinese restaurant without this famous Sweet and Sour Chicken or Pork. Below is my Sweet and Sour Chicken recipe. It took me 40 minutes from preparation to dish out. Yes, it sounds not as easy as the BBQ Scallops I posted few days ago. If you want to try a real challenge, here’s Sweet and Sour Chicken for you. If you love Sweet and Sour as much as I do, you can Sweet and Sour anything you wish. This recipe can guide you to do any Sweet and Sour dish. I’ve already tried chicken, pork, prawn and scallops. They all taste nice, and especially serve on top of white rice. Yummy Yummy.

INGREDIENTS

     300g boneless and skinless chicken breast (cut into 1.5cm chunks)
     1 green bell pepper (cut into 1-1.5cm chunks)
     1 red bell pepper (cut into 1-1.5cm chunks)
     1 can pineapple chunks with juice
     4 large scallions only use the root part (halved)
     Vegetable oil for stir-fry

BREADING SAUCE

     2 cups water
     3 tablespoons cornstarch
     2 cups flour
     3 tablespoons vegetable oil
     1 teaspoon salt
     2 tablespoons baking powder

SWEET AND SOUR SAUCE

     3 tablespoons white vinegar
     1 tablespoons cornstarch
     1 tablespoon sugar
     1/2 teaspoon salt
     1/2 cup pineapple juice
     3 tablespoons ketchup

METHOD

1.Mix chicken chunks and the 3 tablespoons of cornstarch in a bowl and coat well.

2.To make the breading sauce: in another bowl add 2 cups flour, 1 teaspoon salt, 2 tablespoons baking powder, 3 tablespoons vegetable oil and two cups water whisking until the batter has become smooth. Pour batter over the coated chicken pieces and stir until all the pieces being coated.

3.Place vegetable oil in a deep fryer on a high heat for 1 minute, and then lower to medium. Fry the chicken pieces in batches until it turns to golden brown, about 3-4 minutes. Drain these fried chicken pieces on kitchen paper and keep side.

4.Place a little bit vegetable oil in a wok. Add the green and red bell pepper and the scallions, stir-fry for 2-4 minutes. Remove from the wok.

5.To make sweet and sour sauce: Put the white vinegar, sugar, salt, pineapple juice and ketchup in a wok. Bring the mix sauce to a boil and simmer for 5 minutes, and then add the pineapple chunks. Mix the 1 tablespoon of cornstarch in a bowl with some cold water, and then pour into the sauce and well stir until the sauce gets thickened.

6.Add the fried chicken pieces into the sweet and sour sauce, and still on medium heat for 2 minutes. Finally it is ready serving with white rice.
