Finally off of the bus and back in the kitchen! Let’s take a look at an old recipe of mine and an even older recipe from Toll House. The result? The Chewy 2.0!

  4. With allll due respect, your Chocolate Chip Cookie #10 from the 2004 I’m Just Here for More Food Cookbook, is, definitevely, the best chocolate chip cookie recipe ever created. I JUST realized that I’ve been making that recipe for over 20 years!! I mix them by hand.. the process is muscle memory for me, weighing the ingredients, melting the butter, gently folding the wet stuff into the dry stuff. I bake them just long enough to have the perfect little crunch on the outer edge but chewy in the center. I’ve made them so many times that I can predict how the ambient temp and the humidity will ever so slightly nudge the batter one way or the other. I even won over my dissertation committee with them ELEVEN YEARS ago.. I’ve taken them everywhere. So Sir, it’s #10. Forever.

  7. I use blended up rolled oats in my cookies along with bread flour. For anyone that likes their cookies hearty and not just pleasantly chewie, I recommend it. I also like the flavor of Guittard chips best, but of course, to each their own.

  10. I made these a couple days ago, let them sit in the fridge for a day, and then moved to the freezer. They are the BEST chocolate chip cookies I've ever made, and they are the perfect cookie. Everyone reading this comment needs to make these immediately!!!!!!!!!!!! This is a paradigm shifting cookie

  12. This is similar to the recipe we've use by Baker Betty. Maybe her inspiration was AB himself? Bread flour ✅ melted butter ✅ only thing was not doing yolk only, but SOOOO good! I do like a chewy cookie!

  13. Growing up we had a cookbook from golden circle, their recipe made a thick but crunchy recipe more like a jam drop. Being in Australia we also called them choc chip biscuits not cookies. My brain always thinks cookie is soft and biscuits are hard. We also had the cheapest chocolate chips the homebrand. I coded to like that now and sometimes nestle or cadbry are too far from my original and to rich. Awesome video as always. Thanks for being you.

  14. One thing that I've done that improves chocolate chip cookies is to mix different types of chocolate chips.

    I've started using an equal mix of white, milk, and dark chocolate chips whenever I make them
