Kuay Jab is a traditional Teochew-Chinese rice noodle soup, featuring rolled-up noodle sheets served with seasoned pork and offal. The Kuay Jab you're having here is the closest to the authentic Teochew version. Food historians and Chinese and Singaporean gourmets agree that the most authentic version is found in Thailand. It's a dark, aromatic broth simmered with Chinese five-spice (cinnamon, star anise, etc.) and soy sauce. It has a deeply savory, slightly sweet, and comforting flavor. However, the original Chinese version differs from the Thai one in that the noodles aren't rolled. Another version, with a clear, peppery broth, is a Thai-Chinese adaptation to suit Thai tastes.😊
