This Friday, we wanted something bold and stacked — so we built up hearty Ostrich Patty Dagwoods, with crispy wings and golden potato wedges on the side. Here’s our Sunday lunch spread:

Ostrich Patty Dagwoods with Air-Fried Chicken Wings & Baby Potato Wedges

Ostrich Patty Dagwoods
Ingredients:
2 ostrich burger patties
4 slices Dagwood-style bread
6 slices cooked beef rashers (or bacon)
4 slices cheddar cheese
1 large tomato, sliced
1 small lettuce, leaves separated
1 small red onion, sliced
2 tbsp mayonnaise
2–3 sliced gherkins
Salt & pepper, to taste

Method:
Season ostrich patties with salt and pepper, then grill or pan-fry for 4–5 minutes per side until cooked through.
Toast bread slices lightly.
Assemble each Dagwood: spread mayonnaise on bread, layer lettuce, tomato, onion, gherkins, ostrich patty, cheddar cheese, and beef rashers.
Top with bread, press down gently, and secure with a skewer if needed. Serve warm.

Air-Fried Chicken Wings
Ingredients:
8–10 chicken wings
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp chicken spice
Salt & pepper, to taste

Method:
Preheat air fryer to 190°C.
Toss wings with olive oil and seasonings.
Air-fry for 20–25 minutes, shaking halfway, until crispy and golden.

Baby Potato Wedges
Ingredients:
500g baby potatoes, halved or quartered into wedges
2 tbsp olive oil
1 tsp rosemary (fresh or dried)
Salt & pepper, to taste

Method:
Preheat oven to 200°C.
Toss potatoes with olive oil, rosemary, salt, and pepper.
Bake for 25–30 minutes until golden and crisp, turning halfway.
