Ingredients
Potatoes β 900 g
Butter β 60 g
Heavy cream β 80 ml
Salt β to taste
Black pepper β to taste
Garlic β 3 cloves, minced
Onion β 1 large / 180 g, diced
Ground lamb β 500 g
Carrots β 2 medium / 180 g, diced
Egg yolk β 1, optional, for richer mashed potatoes
All-purpose flour β 20 g / 2 tbsp
Fresh rosemary β 1 tsp or dried rosemary β Β½ tsp
Fresh thyme β 1 tsp or dried thyme β Β½ tsp
Chicken broth β 250 ml
Corn β 120 g
Peas β 120 g
Lightsaber β 1
Method
Boil the potatoes
Peel and cut the potatoes into chunks. Boil in salted water for 15β20 minutes, until tender.
Drain the potatoes, then mash them with butter, cream, salt, pepper, and 1 egg yolk if using. Set aside.
In a large pan, cook the ground lamb over medium-high heat for 5β7 minutes, until browned. Remove excess fat if needed.
Add the onion, carrots, garlic, rosemary, thyme, salt, and pepper, corn and pees Cook for 5β6 minutes, until the vegetables begin to soften.
Sprinkle in the flour and stir well. Cook for 1 minute to remove the raw flour taste.
Pour in the chicken broth. Add rosemary and thyme Simmer for 8β10 minutes, until the filling thickens.
Transfer the lamb filling to a baking dish. Spread the mashed potatoes evenly on top. Rough up the surface with a fork so it browns nicely.
Bake at 200Β°C for 20β25 minutes, until golden on top and bubbling around the edges.
Let it rest for 5β10 minutes before serving. Optional: dramatically cut through the crust with a lightsaber.
