never been a fan of cottage cheese.
I love cottage cheese. I'm leaving for the store right now!
I really dislike cottage cheese, but I love yogurt. Weird? Probably. Yogurt is also easy to make if you have an Instant Pot. I prefer soy milk. Weird? Maybe. It’s a health thing. So I make soy milk yogurt. Hmmm, tastes like…yogurt.

One of my favorite ways to eat cottage cheese is with a decent sprinkling of both white and black sesame seeds and a pinch of Maldon salt.

I made cottage cheese for a science project in junior high. My father was in grad school and we lived in a very small student apartment. My mother was convinced it would stink. As a very low number of young teens on campus, I earned walking around money by babysitting my father’s classmates’ plants, pets and kids. Mom told me I had to make the cottage cheese in a neighbor’s apartment, where I was caring for something for a week.
I like cottage cheese and have since the 70s. What I made wasn’t very good. I made gallons of yogurt in the aughts. Until very recently, most cottage cheeses had so much crap in them that they just tasted terrible. I’ve made my own ricotta. Maybe it’s time to revisit cottage cheese. And then some ricotta! I am so glad to see this! I group on Mayfield Cottage Cheese and tomatoes and lately, cottage cheese that I purchase has been tasting “gamey”. I have tried several different brands and ended up throwing them all out. I am going to MAKE MY OWN.

While I normally like Alton and really enjoy his content, this is not cottage cheese. It is actually Paneer (Indian fresh cheese) or Queso Blanco (Latin American white cheese) . If you make it, thinking it will taste like Daisy or other cottage cheeses you buy in the dairy aisle, you will be disappointed as the curds in this have a rubbery texture that is difficult to break apart in the mouth unlike real cottage cheese that is made with cultured buttermilk and rennet.
