British Chefs Cook in the USA’s Best Burger Restaurant
We travelled to New York to cook at what might be the most important burger restaurant in America — Hamburger America, run by George Motz, the man who has spent his entire career documenting the history of the American burger.
George knows more about burgers than almost anyone alive. He’s smashed over a quarter of a million patties on the same griddle. He uses a bricklayer’s trowel because that’s what every great smash burger cook used in the 1940s. He calls his griddle a “live hamburger museum.” We thought we knew how to cook a burger. We had no idea.
In this video, George teaches Will and Jack how to cook the perfect classic smash burger and the legendary Oklahoma onion burger — the two most iconic burger styles in American culinary history. Then he puts us on the line during a real service to see if either of us is actually up to the job.

I have dairy cattle and also some crossbred beef heifers. Now I have frozen ground beef from a 10 year old cow, 4 year old cow and from a 2 year old wagyu cross heifer. The wagyu cross meat barely has to touch the pan before it's ready to go. It really cooks super quickly compared to the 10 year old. To make rose thick burger really takes more than double the time with the meat from older cow. The 4 year old is the middle ground. For taste, I like the robust taste of the older cow, but also the fatty moist tenderness of the heifer. The 4 year old is good but still the least remarkable. Just wanted to point out that not all ground beef is similar, even with the same fat content.

Interesting to notice that Fallow guys didn't want to taste the burgers at any point, even good American food really is quite questionable. 😀
I had hoped that the Fallow gents would at some point intersect with George Motz, but wrote it off as the idea that British fine dining chefs could cross paths (or even inhabit the same plane of existence) as the giggling human hurricane with the phenomenal sideburns and multiple burn wounds, seemed more or less impossible, but I am very, very happy to be proven wrong.

Will & Jack — you need to come to Australia and try one of MY burgers: 150 gm beef, onion, but pre cooked as you go, lettuce, tomato and beetroot; yes!! Toast and butter the bun; add pre-cooked bacon (as you go) and cheese then assemble in this order. Bun, lettuce, tomato, beetroot, beef, onion, bacon cheese then tomato sauce, bun top. Magic!! Cheers.

I just don't get the George motz thing. It's a basic burger. I think the internet has lost sight of that and just jumped on the hype train because they are told it's amazing.
My Okie Onion Burger experience comes from years of dining on them in El Reno OK, the OG Home Capital of the Onion Burger. The boys from Fallow did great although for some reason I think they were a little nervous. Will and Jack are great Chefs and I have no doubt they can recreate these burgers at Fallow if they choose to.
