I tried making homemade Dirty Rice for the first time using ground beef, pork, jasmine rice, and a simple broth trick that loaded every bite with flavor. Recipe: 1 lb beef 1 lb ground pork 1 yellow onion diced 1 red bell pepper diced 1 green bell pepper diced ΒΎ cup celery diced 2 tbsp garlic minced 2 tbsp SF Tonyβs 1 tsp salt 1 tbsp paprika 1 tsp thyme seasoning 2 cups jasmine rice 2 cups beef broth ( Optional – 1 tbsp chicken bullion or cube)
Brown and cook down the meat till it releases that flavor, DON'T DRAIN THE FAT. Add the trinity, garlic, tonys, salt and thyme and cook for 2-3. ( save a cup of the filling and blend it, to a paste. Trust the process. ) Now add your rice, and mix it in the fat for 2 minutes and add the blended mix and stir. Cover and bake at 370 for 45 minutes. FLUFF and serve with your favorite meat or veggies.

Actually moved everything to the side to properly caramelize the tomato paste directly on the pan, that alone gets a thumbs up from me. So many people just dump it on top and mix it in. Caramelizing straight on the pan for a bit helps turn the paste from somewhat harsh/acidic into a sweeter flavor.
It is not called dirty Rice it is called rice dressing from Southwest Louisiana it is not made with ground meat we do not bake it at all rice dressing is made from the organs of the pig that is the original Creole and Cajun Way

We will not eat that in Southwest Louisiana and you do not put tomato paste in rice dress get it right
