This week we’re making a true French classic — Saucisse aux Lentilles. Sounds fancy, tastes incredible, but honestly… it’s one of the simplest comfort dishes you can make at home. Crispy sausages, rich lentils, a bit of wine, a few aromatics, and suddenly your midweek dinner feels like a Parisian bistro.
I love this dish because it’s the perfect way to bring something new into the weekly meal rota without making life complicated. Put a plate of sausages and lentils on the table and people might shrug… but say “Saucisse aux Lentilles” in your best French accent and suddenly you’re a culinary genius.

  2. English bangers don't go well with lentils as in the French dish, they are not meaty enough, texture is too soft. You need sturdy "saucisses de Toulouse" (available at Borough market I happen to know). And don't forget to eat them with proper Dijon mustard! From a French chef, with love (though I'm also half Kentish) 😃 I will subscribe for the fun
