    Pressure Cooking the Jackfruit

    * Raw Jackfruit (Kathal) – 350–400 g
    * Oil – 1 tsp
    * Salt – Β½ tsp
    * Turmeric Powder – ΒΌ tsp
    * Hot Water – enough to cover

    Gravy Base

    * Mustard Oil – 1–2 tbsp
    * Cumin Seeds – ΒΌ tsp
    * Onion – 3 medium
    * Garlic – 1 handful
    * Ginger – 2 inch
    * Green Chilli – 2
    * Tomato – 2 medium
    * Fresh Coriander Stems – 1 handful
    * Salt – 1 large pinch
    * Hot Water – a splash
    * Water – as required for blending

    Frying the Jackfruit

    * Oil – 3–4 tbsp

    Cooking the Curry

    * Cumin Seeds – a pinch
    * Cinnamon – 1 inch
    * Green Cardamom – 3
    * Black Cardamom – 1
    * Bay Leaf – 1
    * Mace – Β½ blade
    * Salt – to taste
    * Turmeric Powder – ΒΌ tsp
    * Kashmiri Red Chilli Powder – 1 tbsp
    * Spicy Red Chilli Powder – 1 tsp
    * Coriander Powder – 1 tbsp
