Ingredients:
Caramelization:
Sugar- 1 cup
Water- 1/4 cup
(add sugar and water in a pan and let boil in low to medium flame, stir slightly in the beginning and then don’t stir)
(might take up to 10 to 15 minutes in low to medium flame)
(pour it to flan tin/container immediately once you achieve amber color and let it set before pouring flan mix)(make sure its not over cooked/dark colored)

Flan:
Eggs- 2 whole eggs and six egg yolks
Evaporated milk- 350 ml
Condensed milk- 370 ml
Vanilla essence- 1 tsp
Salt- 1/4 tsp
(whisk gently all the above ingredients and strain it 3 times and pour it in flan tin with caramel)
(cover it with aluminum foil & double wrap it)
(the water droplets should not get into tin)
(place it in steam cooker with boiling water and cook it in medium flame for 50-60 mins)
(insert a toothpick to check if it comes out smoothly, if not cover again and cook for 10 more mins)
(let cool completely in room temperature and refrigerate it for 6 hours or overnight before plating it)
