The legendary Madhuri Dixit ma’am is in the YFL kitchen and honestly it is a dream come true! I’ve admired her ever since I was a kid. She is one of India’s greatest actors and performers of all time, and cooking along with her in my kitchen is a moment I’ll always cherish.
Joining her are Triptii Dimri and Dharna Durga, and what fun we have had!
Triptii is such a true foodie, I was surprised to see her love for ‘Desi Ghee’ and her love for food is completely real. Her philosophy is simple: eat what you love and burn it all in the gym later. 😂
And then there’s Dharna. If you’ve ever watched her content, you’ll know exactly what I’m talking about. The moment she walks into a room, the energy changes. There are laughs every few minutes and to see her perform on the big screen is a treat to watch!
We cooked some delicious Moringa Sattu Parathas, shared food memories, talked about favourite comfort foods, travel, cooking and a lot more.
We also spoke about their latest flim ‘MAA BEHEN’ which is now streaming on @NetflixIndiaOfficial
I genuinely enjoyed watching the film. It will make you laugh, entertain you and leave you with a lot to think about as well.

Moringa Sattu Paratha with Chokha
Prep Time: 20–25 minutes
Cooking Time: 25–30 minutes

Ingredients:
Dough
WHEAT FLOUR | गेहूं का आटा 2 CUPS
CAROM SEEDS | अजवाइन 1/2 TSP
KALONJI | कलौंजी A LARGE PINCH
SALT | नमक TO TASTE
OIL | तेल 1 TSP
WATER | पानी AS REQUIRED
Filling
MORINGA CHANA SATTU | मोरिंगा चना सत्तू 1 CUP
ONION | प्याज़ 1 SMALL SIZED
GARLIC | लहसुन 1 TBSP
GINGER | अदरक 1 TBSP
GREEN CHILLI | हरी मिर्च 2–3 NOS
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
CAROM SEEDS | अजवाइन 1/2 TSP
KALONJI | कलौंजी 1/2 TSP
BLACK PEPPER POWDER | काली मिर्च पाउडर A LARGE PINCH
MANGO PICKLE MASALA | आम के अचार का मसाला 2 TBSP
MUSTARD OIL | सरसों का तेल 2 TSP
LEMON JUICE | नींबू का रस OF 1 LEMON
SALT | नमक TO TASTE
Cooking Paratha
WHEAT FLOUR | गेहूं का आटा AS REQUIRED (FOR DUSTING)
GHEE | घी AS REQUIRED
Method:
Start by making the dough. Take a large bowl and add wheat flour, crushed carom seeds, kalonji, and salt. Mix lightly. Add oil and rub it in. Gradually add water and bring the dough together, then knead well for 5–6 minutes until smooth and soft. Cover with a damp cloth and let it rest while you prepare the filling and chokha.
In a bowl, add moringa chana sattu, chopped onion, garlic, ginger, green chilli, and fresh coriander. Add carom seeds, kalonji, black pepper powder, mango pickle masala, mustard oil, lemon juice, and salt. Mix everything together well. The filling should hold together when pressed, if it feels too dry, add a few drops of water.
Now for cooking the paratha, divide the dough into equal portions and roll each one into a smooth ball. Dust with flour and roll out into a circle. Place a generous portion of filling in the centre, bring the edges together, and seal well. Gently flatten and roll out again into a paratha, dusting with flour as needed.
Heat a tawa on medium flame. Place the paratha on it and cook until bubbles appear on the surface. Flip and apply ghee generously. Flip again and apply ghee on the other side as well. Press gently and cook until both sides are golden and evenly done. Repeat for the remaining parathas.
Chokha
EGGPLANT | बैंगन 2 MEDIUM SIZED
GARLIC | लहसुन 12 CLOVES
GREEN CHILLI | हरी मिर्च 4 NOS
TOMATO | टमाटर 4–5 MEDIUM SIZED
POTATO | आलू 4 MEDIUM SIZED (BOILED, ROUGHLY MASHED)
ONION | प्याज़ 3 MEDIUM SIZED
GINGER | अदरक 1 INCH
FRESH CORIANDER | हरा धनिया A LARGE HANDFUL (CHOPPED)
MUSTARD OIL | सरसों का तेल 2 TBSP
SALT | नमक TO TASTE
Method:
Start by making slits in the eggplants and stuff garlic cloves and green chillies into them. Lightly rub oil over the eggplants and tomatoes.
Roast both directly over an open flame, turning as needed, until they are completely charred on the outside and soft all the way through. Transfer to a bowl, cover, and let them steam for a few minutes, this makes peeling easier.
Peel away the charred skin from both the eggplants and tomatoes. Transfer the roasted flesh into a large bowl.
Add the boiled mashed potatoes, chopped onion, ginger, fresh coriander, mustard oil, and salt. Mix and mash everything together well using your hands or a masher until you get a coarse, well-combined chokha. Taste and adjust salt.
Your flaky, flavour-packed Moringa Sattu Paratha with smoky Chokha is ready. Serve hot together.
