Sinaloa: A Local’s Taste of Mazatlán | Pati’s Mexican Table S8 E5

The gorgeous port city, Mazatlán, is in every way a reflection of Sinaloa. It is a place that has struggled through challenging times, but it is also a beautiful, colorful, delicious place that has built itself back up. I meet up with two good friends, chefs Zahie Téllez and Luis Osuna, who both grew up here in this episode of Pati’s Mexican Table.

They each give me a true local tour of the city. Zahie recreates her Sunday lunches with her mother at the Central Market with me. Then Luis takes me to his family’s restaurant Panamá, which his mom started from selling three cakes at tiny grocery store and grew it into a sensation with locations all over Sinaloa.

In my kitchen, I’m inspired by the Mexican cravings on Panamá’s menu. I make a crispy Chicken Milanesa Torta topped with chunky guacamole with a kick — chiles toreados. And Luis shared the recipe for Panamá’s best-selling dessert, a Guava Pie that’s so satisfying you won’t want to stop eating it.
