Today I’m taking you behind the counter in Japan at Sushi Yoshi (寿し芳), a family run sushi restaurant in the snowy town of Myoko, Niigata. Founded more than 50 years ago, this local Japanese restaurant has been serving the community for generations. Now, the founder’s granddaughter has returned home after training at the renowned Sushi Arai in Tokyo’s Ginza district, beginning the next chapter in her family’s story. This Japan food documentary follows Takahito san, the second generation master chef, and his daughter Shui as they work side by side preserving their family legacy. Before taking over the business, Takahito san spent ten years training at one of Nagano’s largest sushi restaurants, eventually earning a position at the counter. When his father’s health declined, he returned home to continue the family business. Niigata is famous throughout Japan for its food culture. Surrounded by mountains and located along the Sea of Japan, the region has access to exceptional seafood and produce. The rough winter waters produce rich, fatty fish that have helped shape the area’s unique Japanese cuisine and sushi traditions. As Shui continues mastering the craft of sushi, she carries the responsibility of building upon the foundation created by the generations before her.

Dude is 50 years old! I heard a saying once from a Japanese sushi chef in Vegas (RIP Shin), "Japanese look young, until they don't". Also, I have two Takayuki knives. They are awesome.
😘👋
頑張ってくださいシュイ chan! I definitely want to stay at that hotel and try their sushi someday! 😊
Aww mom don't give up hope, she may still marry.
This one’s going to a million views
What a nice family, all so hard working and dedicated to their craft! Another excellent video, Paolo, even though plugging your hot sauce in the middle of the big lunch rush was a bit much imo.
Great videos always
新潟は海に近いから魚も新鮮で美味しそう
日本にはトイレの神様と言う歌がある
The long awaited video. The quality content.
the og paolo is backk!! remeber your old vids?? we want that back! food reviews and vlogs thanks
2:29 OK I’ve essentially been studying Japan for decades. Never knowing that the toilet has gods. However, have I gone this long and missed this.
The owner/boss sitting in the kitchen on a stool eating & talking with his employees while also working alongside them all day. How often do u see that in America?
❤❤❤❤🎉🎉🎉🎉
something tells me he did crush a few grains of rice
same thing over and over for years…
eat tuna sandwich in high school for 2 years, and never eat tuna sandwich since then…
From a young punk to a business owner, nice…
I am 3hours away from dinner but gotta move that and proceed to cook then watch. Just gotta eat while I watch your videos makes the food taste greater🤣
One of your best ❤
I would like to dine in here one day if I stop by in Niigata 😋
another great video!! congrats!!!
…HOLUP sir, you had lower teeth just like mine, and I just noticed they are perfectly straight now! Looks good, nice.
3:15 HE DOES NOT look 50 omg
I'm not sure why, but the daughter reminds me of a zora from The Legend of Zelda. A clean, classic yet otherworldly sort of beauty.
This is a beautiful sushi restaurant!
wow
13:43 this mans been eating at this restaurant as long as ive been alive.
Its the japanese version of "ive got shirts older than you, kid"
The ultimate japanese grandad flex
In the near future, it would be cool to see a day in the life of a rice farmer. In the distant future, a day in the life of a Shinkansen conductor, police officer, paramedic, traditional tea ceremony master, swordsmith (Katana master) or one of Japan's most sports athlete no matter the sport. A tour of Toyota or Honda car factories as a behind the scenes series would be dope as well.
bro, are those scorpionfish or stonefish?
didn't know Japanese eat them
Looks like very nice place with humble and hardworking employees and delicious-looking sushi. What's more, they are loving their town. Perfect place to visit when in Japan.
Is girl okay? 😭
Nice one. Thanks.
Great people in that establishment! I really love Behind the Counter videos 🙂
I've been to Myoko to go skiing and eat local food. Both were incredible in this wonderful part of Japan. The locals were also so nice and my family had an amazing time. Can't wait to go back again and seek out this restaurant.
Love this! What a special place!! ❤❤❤❤❤❤❤
I've been watching these videos for years, it has become part of my saturday morning routine. Always lights up my day. The owner who said "It is our responsability to attract more people here". Wow, what a legend. No complaining about being in a difficult location, no victim mindset, only responsability.
Shui chan, we are rooting for you! Your warmth and dedication shows, I'm sure the customers see it too ❤️✨❤️✨👏
I've never clicked so fast for a video
Takahito san is the main character
The master has really good skin! He probably should also launch his own skin care.
at 10:30 i like that he asked u something, so thats this is not so one directional.
I loved Paolo. Good job and very interesting.
I love these behind the scenes. Thank you for sharing them with us. One day me and my family will get to Japan.
Great video as always. And chef and family skin is so pretty. So glowy and healthy
