Today I’m taking you behind the counter in Japan at Sushi Yoshi (寿し芳), a family run sushi restaurant in the snowy town of Myoko, Niigata. Founded more than 50 years ago, this local Japanese restaurant has been serving the community for generations. Now, the founder’s granddaughter has returned home after training at the renowned Sushi Arai in Tokyo’s Ginza district, beginning the next chapter in her family’s story. This Japan food documentary follows Takahito san, the second generation master chef, and his daughter Shui as they work side by side preserving their family legacy. Before taking over the business, Takahito san spent ten years training at one of Nagano’s largest sushi restaurants, eventually earning a position at the counter. When his father’s health declined, he returned home to continue the family business. Niigata is famous throughout Japan for its food culture. Surrounded by mountains and located along the Sea of Japan, the region has access to exceptional seafood and produce. The rough winter waters produce rich, fatty fish that have helped shape the area’s unique Japanese cuisine and sushi traditions. As Shui continues mastering the craft of sushi, she carries the responsibility of building upon the foundation created by the generations before her.

  1. Dude is 50 years old! I heard a saying once from a Japanese sushi chef in Vegas (RIP Shin), "Japanese look young, until they don't". Also, I have two Takayuki knives. They are awesome.

  11. In the near future, it would be cool to see a day in the life of a rice farmer. In the distant future, a day in the life of a Shinkansen conductor, police officer, paramedic, traditional tea ceremony master, swordsmith (Katana master) or one of Japan's most sports athlete no matter the sport. A tour of Toyota or Honda car factories as a behind the scenes series would be dope as well.

  12. Looks like very nice place with humble and hardworking employees and delicious-looking sushi. What's more, they are loving their town. Perfect place to visit when in Japan.

  13. I've been to Myoko to go skiing and eat local food. Both were incredible in this wonderful part of Japan. The locals were also so nice and my family had an amazing time. Can't wait to go back again and seek out this restaurant.

  14. I've been watching these videos for years, it has become part of my saturday morning routine. Always lights up my day. The owner who said "It is our responsability to attract more people here". Wow, what a legend. No complaining about being in a difficult location, no victim mindset, only responsability.
