British Chefs Recreate New York’s Most Iconic Food
We travelled to New York City to try the city’s most iconic foods, then attempted to recreate them back in our London kitchen.
From a legendary Katz’s Deli pastrami sandwich and a classic Russ & Daughters smoked salmon bagel, to New York steak and eggs, buffalo wings, a 4 Charles-style Wagyu burger, breakfast burritos, tacos and one of the best pizzas we’ve ever eaten, this is our ultimate New York food challenge.
We taste each dish in NYC, break down what makes it so good, then try to recreate it using proper chef techniques, from smoked brisket and handmade bagels to buffalo sauce, burger patties, tortillas and pizza dough.
Can British chefs recreate New York’s most iconic foods? Or are some dishes only possible in New York?

As somebody who lives in NYC and cannot go to these places in a post TikTok world where there is a constant line around the block, you did the right thing by visiting in the depth of one of winter.

But I've seen so many people struggle with making a New York style pizza from scratch.
One of my favorites in NYC was a place that still did coal-fired pizzas. Doubt they're still around.
As an American, Our beef is trash, Yeah you can get some good beef if you dont live in a city, but 99% of all cattle are fed GMO Corn, slaughter under 2 years old and just garbage.
You visited some of my favorite NY spots. Balthazar and its sister restaurants are my go to places in the city. I'm originally from Buffalo and have been eating those wings since long before either of you guys were born. I ate them many times at the place where they originated – Frank and Theresa's Anchor Bar. I don't think they coated them with anything prior to frying. Los Tacos at the Chelsea Market are among the best in the City. Trivia, Al Pastor tacos originated from Lebanese immigrants to Mexico City in the early 20th century- hence the shwarma method of cooking, but lamb was not as prevalent so the Mexicans switched to pork (which they marinate first btw), but the name still suggest the original meat, al pastor meaning shepherd style. In my opinion, Katz's is over rated, I think there is better in the City, but no place gives as much meat. Shopsin's is fantastic with lots of funky items on the menu- use a plancha next time – a non-stick skillet isn't hot enough and is too confining. Finally, I prefer Barney Green grass for bagels over Russ and Daughters, but Russ has great caviar.
That bagel needs to be baked after poaching. Bagels are baked. They are toasted once cold, from sitting on the shelf. Par! LOL.

Bros. You did not leave NY to get tacos and burritos? Either come down to Houston, Austin, or SA to get some Tex-mex, or do not review Tex-mex. I lived in South Jersey for years and Texas for two decades. NE just does not get the fresh vegetables or meat you need. You’re practicing low level heresy.

What I want to know is….. Of all the incredible things you ate in the U.S. and recreated well back home, which thing have you added to your menu? I really don't know how you couldn't do the Reuben sandwiches as specials once in a while. That has got to be killer no???
dude, didn't make the pastrami, didn't make the bread… you cut meat, made some secret sauce and put it on some storebought loaf? I mean, I recognize that it's fucking hard to master pastrami, but make a little effort.
Proper buffalo wings aren't coated in anything prior to frying. It's also weirdly hard to get decent ones in NYC.
Great fun and entertaining episode. You need to put corneal on your pizza peel. They act as little ball bearings to allow the pizza to slide off easily and get back on easily as well. Always learn something from your videos, even this one. Keep the great videos coming our way.

If you want depth of flavor in your steak, you gotta go to high end establishments in cow country. One of the best steaks I've ever eaten, I had in Oklahoma.

Amazing stuff as always, lads. If you're really looking for places to go, would love to see you two take on Hong Kong next. One of the most incredible places I've ever been and with a food scene that spans fine dining to street vendors and reflects traditional Chinese influences, immigrant cuisines, and of course the lasting impact of British rule. Baked porkchop rice from a cha chaan teng, claypot rice and goose, egg tarts….can't wait to go back.
