How to Run A Restaurant In The Middle Of The Ocean | Eating Out
Eating Out is a new series where we explore the fringes of the restaurant world. This is the opposite of the comfortable home kitchen or the convenient local community diner. We go to locations where serving food seems like an impossible task. If humans can go there, then someone has to figure out how to feed them. We will be there to tell you how these adventurous chefs pull off eating out in the most challenging areas of the world.
In this episode we are in the U.S. Virgin Islands to see how a floating restaurant pulls off the logistics of staying a float and serving hungry customers with no connection to land. The owners of “Lime Out” talk to us about the logistical challenges of creating a restaurant with no connection to running water or electricity, and on top of that it has to float on the ocean. They are constantly fighting salt water from the ocean, the storms that roll in, pirates, and the regulatory nightmare of running a boat and a restaurant together. We also sit down with the chef that makes all the cooking happen. All of these logistical issues could be solved but if the food isn’t good, it won’t be a success. Chef Amaro walks us through what it takes to roll out 1000s of tacos on the ocean, and how he has the best view of any chef in the world.

My parents used to take me to St. John every other year for spring break when I was a teen in the 90s and early 2000s. we went less as I got older. last time we went was in 2015 I think, so I'm not up to the current vibe, but from what I remember, St. John was the island you went to for the national park, peace, and quiet. it had one major resort (the westin) and a few smaller ones, but after our second trip we steered clear of these places. this floating restaurant seems really out of place, especially in coral bay, the sleepier part of the island. I would expect to see something like this in the bay by the Westin, or off St. Thomas. It seems like a cool concept and I wish them success but this is not the St. John vibe I remember.
