Cornbread Chicken Enchiladas | Food Wishes

I developed these cornbread crepes to serve alongside our recently posted reverse barbecue chicken, and in that video I promised I’d eventually show you how to make them. I just had to decide on how, and after several experiments, I settled on chicken enchiladas, and was absolutely blown away by how great they were. This is a must make! Enjoy!

  5. Hmmm…I wonder about the fair use of a guy in a wheelchair following each Chef John video with a kosher-ish version of the same dish…with obvious comparisons and attribution. Hmmm. Oat milk in batter, fake cheese, and fake sour cream. Hmmm. I have LOTS of ideas I never follow-up on, but it's fun to imagine…

  6. I bet the sweet and savory tangy mix goes a long way here. I see it’s only a teaspoon of sugar but I’m guessing that’s enough to really balance this nicely. Added to my collection thanks CJ

  7. I'm a southern Indiana girl, 45 min. from French Lick. Kudos for the Larry Bird reference! Have you been to the French Lick or West Baden hotels? They are worth taking a weekend trip to!

  8. will be making these, now i have a reason to use my pineapple tomatillo sauce i made fresh recently! only thing is i dont have chicken but i do have turkey. SAVED!

  9. clearly you and your wife have never had enchiladas in Mexico where they're originally from, salsa verde should not be simmered for so long, it tends to turn bitter because of the tomatillos, salsa has to be fresh not jarred you people are extremely lazy

  10. This is a fantastic recipe – I cannot wait to make it! They’d also be delicious with roasted poblanos mixed into the chicken filling.

  11. If you don't like to leave a pot on the stove when you are not there, you can put the sauce and chicken in a crock pot on low in the morning and it will be done by the time you get off work.

  12. It's been a few years but "you are after all the Larry….of your Bird" got a sensible chuckle out of me.
