What a unique take on eastern style bbq. What and awesome family and a spiritual journey for Christopher. I want to meet him and try the whole hog mojo style, with all the fixins. Road trip for me. Got to get there. Love the story, his evolution and his grandfather would be incredibly proud. That crispy pork skin is to die for. You could just "hear" how great it is!
Wow indeed, an incredible story yet again, and amazing food from woah to go. I saw Miguel in the picture just before Christopher mentioned his name. I love making his tortillas that you showed us, with my own variation of course (replace half his salt with bbq rub)
Can see why he has the respect and regulars that he has. And that final dish, definitely needs to be mixed together β¦ yummo
