Man, Neal. My mother in law… I don't need to say anymore. Lol. She smokes us out of a house whenever she comes in to visit because she has no patience and when she cooks she turns everything on high. I have to tell her, EVERYTIME.
I think the turn everything to high came because all equipment is not the same. Had a cheap gas grill off of Facebook that all burners on max just got to 400. My new grill that is half the burners on low. That thermometer is the best tool to know what you are actually working with.
All griddles are different. On my natural gas flat top I pretty much have to run on high. It really only runs at 2 temps: high and anything less than that is low no matter where you set the knobs. There really is no in between. But the high is perfect for most of what I need to do and going to low is fine for things like eggs. Or running some burners on high and others off and using that carryover heat. I've learned to manage the zones and flip between high and low to get what I want. But I understand your point.

Thank you. Brother and sister, Med rare. Me med well, wife well, Mother shoe leather. I set it at 400° and time accordingly. OK, I put my mom's on yesterday.

Only time my griddle has been on high was to season. I normally heat'er up on med, cook on low.
If I stir Fry or smash Burger, it stays on med.
Agree! I found that out to late! Now if i can get my hash browns perfect!
Is it my device or is the video sped up, cut scenes dont matter but the cadence of the voice is way off and hand motions are faster than normal

Great tips
Ok I don't disagree with you about most of it, but… the smashburgers at the end – that segment really felt rushed and even truncated. You didn't clearly show the results of the smashers at the three temps. Now, I will say, at the 450ºF mark, there looked to be decent crust – but in the ½ second or so that we saw of the post-flip smashburgers on the ~525ºF and 650ºF zones, those looked like they had insane (and tasty!) crusts! That was one case where I would say it looked amazing at the higher heat. I don't know why you blew through that particular aspect of the video, but from what I saw, in that one scenario, it really DID look like the higher heat was both justified and appropriate.
Personally, I do tend to do smashburgers at the 500ºF+ range, but I don't think I've EVER cooked anything at 600ºF+.

Some people do take off in their neighborhood flooring it right out the gate. Haha On a more serious note I totally agree with everything you said Neal. I don't never turn the burners up to high. Medium high is really all you need with a good preheat. Even then with a lot of things I don't even go above medium. Having different zones is totally key, especially when cooking breakfast.

Nice breakdown. I usually turn mine on high to heat up, then back it down to medium before cooking. Seems to work the best for me!

Natural gas vs propane is a HUGE difference as well. I run natural gas on my Blackstone and it requires a higher setting than the same exact Blackstone running off propane. However, just because you can doesn't mean you should. In my opinion, some things are just not meant for the griddle period.

I follow the Blackstone sub on Reddit. About 90% of the food I see posted over there is seriously burnt to a crisp, and somehow people think that's how it is supposed to be. I don't get it. But you'll get downvoted into oblivion if you go against their prevailing wisdom that "Thou must always cook on High". I cook between low and medium for everything, and cooks like smashburgers go so fast I can barely keep up before burning them they get done so fast. I can't imagine trying to cook higher than medium on my grill, knowing each grill is a little different.

I have the pit boss 5 burner ultimate model which has the ceramic finish and I always cook on low. To me it's the best way to cook on a griddle, but to each their own. Plus it's saves on the propane.
