100 Hours Working In Fine Dining

After stepping away from working in Michelin-starred kitchens in NYC, I was invited by my friend and former sous chef, Andrew Sargent, to help with a fine dining pop-up in Texas. Over the next 100 hours, I had the chance to jump back into the fast-paced world of fine dining and show all of you the prep, service, and relentless pursuit of excellence that I think is still, surprisingly undocumented.

I really hope you all enjoyed my very first YouTube video, I had so much fun learning and improving as I spent these few days in Texas. This video was exceptionally challenging to film, especially trying to balance my own expectations of focus, and responsibilities with recording and forcing myself to break that concentration. With that being said, it was amazing throwing myself back into the fire and feeling that familiar pressure on my shoulders again, it was both unnerving and comforting at the same time. Your like, comment, or sub would really mean a lot to me. But ultimately, for all of the aspiring chefs, home cooks, or just those that are interested in seeing what happens behind kitchen-doors. My goal is to document the pursuit of culinary mastery while making professional cooking more accessible
