Refreshing prosecco creation with red berries

2 sheets | gelatin |
300 ml | Prosecco |
200 g | mixed berries (frozen) |

Prosecco is the perfect companion to this little dessert of the same name and it simply will not do without it. Fizzy and light, it harmonizes very well with the tart berry flavor.
Step 1
Soften gelatin in cold water.

Step 2
In a small saucepan boil sugar with water, vanilla seeds, and the zest of one lemon.

125 g sugar / 125 ml water / 1 vanilla bean / 1 lemon
Step 3
Add softened gelatin to the hot mixture. Remove from the stove and leave to cool at room temperature for approx. 20 – 30 min.
Step 4
Distribute frozen berries in serving glasses. Add Prosecco to the cooled mixture in the sauce pan, whisk and immediately pour over the frozen berries. Leave to chill for at least 10 min. to allow the gelatin to solidify.
