These BBQ Chicken Cheesesteaks on the Blackstone griddle are the perfect way to turn leftover barbecue chicken into an easy griddle recipe that only takes a few minutes to make.
This is kind of like a BBQ chicken melt meets a chicken cheesesteak, all piled onto a hoagie bun with diced BBQ chicken, melted Colby Jack cheese, barbecue sauce, red onions, and pickled jalapeños. The Blackstone griddle makes it fast, easy, and packed with flavor.

BBQ Chicken Cheesesteak Recipe
Ingredients:
Leftover BBQ chicken breast, diced
2–3 slices Colby Jack cheese
Barbecue sauce
Red onions, sliced or pickled
Pickled jalapeños
Hoagie buns
Instructions:
Preheat the Blackstone griddle to medium heat.
Add the diced leftover BBQ chicken to the griddle and warm it through.
Add a little barbecue sauce and mix everything together.
Pile the chicken into a sandwich-sized portion.
Lay the sliced cheese on top.
Place the hoagie bun on top of the meat pile for it to steam and help melt the cheese.
Use your spatula to flip the BBQ chicken mixture into the bun.
Finish with red onions, pickled jalapeños, and extra barbecue sauce if desired.

Diced exactly how you showed it and I have reasons to back it up. 1st: as you always say, “match the hatch” and when you dice as you did it doesn’t matter if you’re feeding a 4 year old or a 64 year old they’re gonna have a good bite. 2nd: smaller pieces have more surface area for sauces and can pack a bigger punch, 3rd: you’re cutting against the grain, with chicken breast the grain can sometimes change and dicing ensures shorter cut muscle fibers (ie: more tender meat) 4th: and most importantly, you get to grab a couple pieces of diced chicken and run it to your wife and kids for a “pre-dinner” taste and see what they actually think of it before getting to enjoy the final product.
