Kerala Sambar Recipe
Ingredients
* 1 cup toor dal (sambar dal)
* 2 green chilies, slit
* 1 tsp turmeric powder (for cooking the dal)
* 1 tsp asafoetida (hing)
* Salt to taste
* Water as required
For the Tempering
* 2 tbsp coconut oil
* 1 tsp mustard seeds
* 2 dried red chilies
* A few curry leaves
* 1 medium onion, thinly sliced
* 1 tomato, chopped
* 1 green chili, slit
Spice Mix
* 2 tbsp sambar powder
* 1 tsp turmeric powder
* 1 tsp Kashmiri chili powder (or regular chili powder)
* 1 tsp coriander powder
* ¼ tsp roasted fenugreek powder
* Salt to taste
Other Ingredients
* Tamarind extract (prepared from a small lemon-sized ball of tamarind)
* Water as required
* Fresh coriander leaves for garnish
Method
Yesterday, when I posted my soft idli recipe, many of you requested my sambar recipe. So here it is!
Pressure cook the toor dal with the green chilies, turmeric powder, asafoetida, salt, and enough water for 2 whistles. Mash the cooked dal well and keep it aside.
Heat the coconut oil in a pan. Add the mustard seeds and let them splutter. Then add the dried red chilies and curry leaves. Add the sliced onion and sauté until it turns soft. Stir in the chopped tomato and green chili, and cook until the tomato becomes soft.
Add the sambar powder, turmeric powder, chili powder, coriander powder, roasted fenugreek powder, and salt. Mix everything well on low heat.
Pour in the tamarind extract, followed by the cooked dal. Add enough water to adjust the consistency and bring the sambar to a gentle boil.
Once it starts boiling well, garnish with freshly chopped coriander leaves.
Your delicious, flavorful Kerala-style sambar is ready to serve!
