Some takeaways:
1. Use a binder if you like. Mustard is very popular.
2. Your favorite rub or seasonings.
3. I like to smoke ribs at 250F-275F at about 3-3 1/2 hours they’ll start to get close to that magic 190-195. If you like shreddy or fall off the bone, shoot for 205F.
4. Splash with cider vinegar and tent with foil or paper. Let rest for at least 10 minutes.
5. Slather with your favorite bbq sauce or other sauce and char on a high grill.
6. Use the bones at your cut guides. And enjoy!

  2. Looks great! You've inspired me to take some beef ribs out for tomorrow's dinner. What kind of pellets did you use? Ill be using apple wood chunks. Those are good on pork and beef in my opinion.

  4. Dude….. What happen to wrapping those babies with tin foil/butcher paper and some apple cider? Cook that baby for another 2hrs and so delicious.
