6:20 Chinese Cooking Desmystified has a good video about this. Apparently, the stigma against MSG started with Chinese people from richer regions turning their nose up against Chinese food from poorer regions (for being too salty, too greasy, too much MSG), which led to that infamous paper from Robert Ho Man Kwok about "Chinese restaurant syndrome" because he was one of those richer Chinese people. What happened next was White Americans co-opting Chinese regional classism and turning it into generalized anti-Asian racism.
Anyways, that's partly why anti-MSG sentiment is so deeply ingrained in Asian cultures… because it started in Asia in the first place.
